Buah fresh-cut melon merupakan produk buah yang diolah minimal dan siap santap untuk dikonsumsi oleh konsumen. ini mudah rusak dalam keadaan segar. Alternatif penangangan adalah dengan menggunakan teknologi ozon dikarenakan mampu menekan pertumbuhan mikroba bebas dari residu kimia. Tujuan penelitian mengetahui pengaruh konsentrasi larutan terhadap lama penyimpanan karakteristik mutu fisika, kimia melon. Metode Rancangan Acak Lengkap (RAL) 2 faktor, faktor pertama 0.4, 0.8, 1.6 ppm. Faktor kedua waktu selama 3 hari 5 hari. Hasil menunjukkan bahwa hasil kadar vitamin C sebesar 8.43–11.60 mg/100g, pH 5.19-4.83, total padatan terlarut rerata 5.10–6.34 °Brix, susut bobot 10 °C 8.87–14.14% 30 15.23–22.30%.
